Muffins & Cupcakes
Quick easy muffins.
These are my mom’s favorite. Moist and fruity.
She always wants a double batch. I’m glad that they are easy to make.
Pineapple/Mandarin orange Angel Food Cake
What You need:
14 oz. can crushed pineapple in juice
10 ounce can mandarin oranges in juice and drain the juice
Zest of one orange (or not)

How to make them:
Heat oven to 350 degrees.
Line the muffin pans with paper liners or spray with PAM. (OK, I do not have muffin pans, I used cup cake pans and they work just fine.)
Combine it all together and mix well.
Fill the cupcake or muffin cups ¾ of the way full.
Bake for about 15 minutes.
French-Vanilla Cranberry Muffins
What you need:
2 T. flour
3 eggs
2/3 cup milk
1/3 cup vegetable oil
1 t. baking powder
1 cup dried cranberries, or 1 cup fresh raspberries, or 1 cup fresh blueberries.
What to do:

Mix it all together and spoon into muffin cups about ¾ full.
Bake at 375 degrees for about 20 minutes or until tops are lightly browned.
Apple Muffins
What you need:
1 box yellow cake mix, or white or spice.
2 eggs
1 cup sour cream
21 ounce can of apple pie filling.
Ground cinnamon.
What to do:
Preheat oven to 350 degrees.
Spray the cupcake or muffin pans with PAM or another non-stick spray.
Combine eggs, sour cream and apple pie filling. Add cake mix.
Spoon batter into cups up to ¾ way full.
Sprinkle with cinnamon.
Bake 25 to 30 minutes. Cool in pan for 10 minutes.
Best when they are served warm with real butter.
Molasses Muffins
What you need:
2 cups of buttermilk pancake mix
½ t. ground cinnamon
¼ t. ground ginger
2/3 cup of milk
1/3 cup of molasses
¼ cup of sugar
2 T. butter or margarine
What to do:
Heat oven to 350 degrees.
Line cupcake or muffin pans with liners.
Combine pancake mix, cinnamon and ginger.
Remove 1/3 cup for topping.
Combine sugar with the 1/3 dry mix for topping. Add the butter into the topping mix.
In another bowl combine the milk and molasses. Stir into the dry mix until just moistened.
Spoon into cups until ¾ full.
Put the topping mix on top.
Bake for 15 to 20 minutes.
Pumpkins Muffins
These are sticky and wonderful warm.
What you need:

Pumpkin muffins
1 box of spice cake mix
1 t. pumpkin pie spice
15 ounce can of pumpkin puree or pie mix.
What to do:
Mix it all together and spoon into paper-lined muffin or cupcake cups, until ¾ full.
Bake at 350 degrees for 18 to 22 minutes.
Apple Pumpkin Cupcakes
1/2 cup butter, softened
1 cup sugar
2 eggs
2 cups flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 1/4 cup diced apples
1 cup canned pumpkin puree
1/2 cup milk
1/2 cup raisins
1. Cream butter and sugar until fluffy.
Add eggs one at a time and beat well after each.
2. Combine flour, baking powder, baking soda, salt and spices.
3. combine apples and pumpkin, milk and raisins.
Now stir the flour mixture wtih the apple mixture and then into the butter and egg mixture. Mix until well belnded.
Fill paper-lined or greased muffin pans 2/3 full.
Bake at 305 degrees until a wooden pick inserted near center comes out clean. About 25 minutes.
Cool on wire racks.
Makes 22 to 24 cupcakes/muffins.
