Chewy Ginger Cookies

mix together:
3/4 cup oil
3/4 cup sugar
1 egg, lightly beaten
1/4 cup molasses

Mix well:
2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground ginger
2 teaspoons ground allspice

 

Gradually add the flour mix into the oil mix.
Cover and chill for 1 hour.
Shape into balls and roll each ball in sugar.
Bake at 375 degrees for 11 minutes.
Cool on a rack. 

 Diabetic Peanut Butter Cookies
 What you need:
1/2 cup butter flavored Crisco
1 egg
1/2 teaspoon vanilla
2 teaspoons Sweet N Low brown sugar
12 packets Equal
1/2 cup creamy peanut butter
1 1/4 cup flour
1 teaspoon baking soda
1/4 teaspoon salt (optional)

What you do.
Cream together the Crisco, egg, vanilla, brown sugar and Equal.
Add peanut butter and mix.
Sift the flour, baking soda and salt. Once mixed up add to the creamed mix.
Scoop out and form 1” balls.
Place on coolie sheet and flatten in a criss-cross pattern using a fork.
Bake at 350 degrees for 10 minutes.
Cool and enjoy.
 
 Oatmeal Raisin Spicy Cookie 
What you need:
1 package Spice Cake Mix
4 egg whites
1 cup quick-cooking oats
½ cup Crisco butter flavor
½ cup raisins
 What to do:
Heat oven to 350 degrees.
Grease baking sheets
Combine cake mix with egg whites, oats and oil in large bowl. Use an electric mixer at low speed.
Drop from rounded teaspoons onto the baking sheet.
Bake for 7 to 9 minutes.
Cool one minute on baking sheets.
Remove to rack.

Cowboy Oats (cookies)
Preheat oven to 350 degrees.

Need:
½ cup butter
½ cup margarine
1 cup brown sugar
1 cup white sugar
2 eggs
1 t. vanilla
Do; cream the above ingredients well.

 Need:
2 cups flour
1 t. baking soda
½ teaspoon baking powder
½ t. salt
2 cups rolled oats
1 cup chocolate chips or raisins
Do: Add to cream mixture and blend well.
Drop from rounded teaspoon unto the ungreased cookie sheet.
Bake at 350 for 10 to 12 minutes.
remove from baking sheet and cool.


Ritz Chocolate Cookies
What you need:
50 to 60 Ritz Crackers
cup of Peanut butter (I prefer creamy)
1 Package of Chocolate Brick
Wax paper

What to do:
Spread the Peanut butter over a Ritz Cracker, then use another Ritz cracker to make a sandwich. Do for all the crackers.
Now melt your chocolate brick. You can melt in the microwave at a very low 50% power for 30 seconds at a time. If heat is too high you will burn the chocolate.
Once melted, dip the peanut butter cracker sandwich into the chocolate. Place on wax paper.
Let the cookie set until the chocolate hardens.   No need to refrigerate.

 

Chinese Haystacks 

  You need:
2 (12 ounce) package butterscotch chips
1 (12 ounce) package Semi-sweet Chocolate chips
1 Large can of Chow Mein Noodles
extras: almonds, cashews, Spanish peanuts.

 What to do:
Melt all the chips together in a large pan over very low heat, stirring constantly.
Add the noodles and stir to coat.
Add any of the extras you like.
Stir to coat.
Place on wax paper by the spoonful and cool until set.

 

Fruit Cocktail cookies

 Very good and moist cookies.

1 cup shortening
1 Cup brown sugar
1/2 cup white sugar
3 eggs beaten
2 cups fruit cocktail- drained
1 teaspoon vanilla
1 teaspoon soda
1 teaspoon baking powder
4 cups flour
1 teaspoon cinnamon
1 teaspoon cloves

Cream shortening and both sugars.
Add beaten eggs – stir well. Add drained fruit cocktail and vanilla.
Sift together the soda, powder, flour, cinnamon and cloves.
Add the sugar mix and the cream mix and blend.
Drop by spoonfuls on a cookie sheet.
Bake at 375 degrees until lightly browned.
Bake about 8 minutes.
