Micro-Wave Peanut Brittle100_27991

 

 A quick easy snack. Make ahead of time and enjoy all day. Easy to take to the lake or on a hike.
Need:
1 cup sugar
½ cup corn syrup
1 ½ to 1 ¾ cups dry roasted peanuts
1 t. butter
1 t. vanilla
1 t. baking soda
Grease a baking sheet
2 qt. glass container
Mix sugar and syrup- heat on high for 4 minutes in the glass container
stir in peanuts – heat 3 minutes
stir in butter & vanilla – heat 2 minutes
Blend in baking soda – mixture turns light & fluffy
Then spread out on the greased baking pan – cool and then break and enjoy.
 

 

Fun Chocolate Fudge

Large mixing bowl
mixing spoon
measuring cup/spoons
9X9 by 2 inches deep pan

Need.
2 3 oz. cream cheese
1 pound confectioners sugar
4 1 oz. envelopes unsweetened choc. (soft/creamy type)
1/2 teaspoon vanilla
2/3 cup chopped nuts
pat of butter

Warm cream cheese to room temp in the bowl.
Add 1/2 the sugar gradually. Mix
Open chocolate envelopes and squeese intot he mixture.
Add rest of the sugar as you mix.
Stir in nuts and vanilla.
Butter the pan.
Put fudge in the pan and spread evenly.

Now the hard part! Chill the fudge for 2 hours or longer. When the fudge is firm, cut it into small squares.
