Aunt Grace’s Carrot Bread
3 cups flour
2 cups sugar
1 teaspoon soda
3/4 teaspoon salt
3 eggs
2 cups shredded carrots
1 cup oil
1 can 8 oz. crushed pinneapple drained
1 cup chopped peacons or walnuts
Mix it all together Place in a loaf pan.
Oven at 350 degrees.
Now drizzle over bread:
3/4 cup sugar
1 to 1 1/2 teaspoons milk
1/2 teaspoon vanilla
Bake for 65 to 75 minutes at 350 degrees.

Irish Raisin Soda Bread

4 cups flour
1/4 cup sugar
1 Tablespoon baking powder
1 teaspoon baking soda
1/2 cup butter
2 cups raisins
1 Tablespoon caraway seeds
1 1/2 cup buttermilk
1 egg beaten
Blend together flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles a course meal. Add raisins, caraway seeds, buttermilk and egg. Stir until blended.
Knead on floured board until smooth.
Shape dough into 2 balls and place into 2 greased 8″ round pans.
Flatten to fill pans.
Cut a cross in top of each loaf.
Bake at 375 degrees about 40 minutes or until done.
