Mexican Cornbread Meal
1/2 pound ground beef
1 small onion chopped
1/2 teaspoon salt
one 6 12 oz. package of cornbread mix
one 8 1/2 oz. can creamed corn
1 Cup cheddar cheese- grated
1 1/2 teaspoon Tabasco sauce.
Brown ground beef and onion in a heavy skillet.
Sprinkle with salt and set aside.
Mix up cornbread according to package directions
Add corn and Tabasco sauce.
Pour 1/2 of mixture into greased 8″ sq. pan.
Spread ground beef over the cornbread mix.
Sprinkle cheese over the ground beef
Spread rest of corn bread mixture on top of cheese.
Bake according to directions on cornbread mix package.
Serve immediately.

Grandma Bearnes McHaddins Plates
1 pound ground beef
2 onions-sliced thin
1 med green apper- cut small cubes
5 carrots, sliced thin
6 potatoes- slice thin.
1 can tomato soup- undiluted.
In a buttered 2 quart casserole dish arrange the above ingreadients in the order given except the soup. Be sure to salt and pepper the first layer of beef and top layer of potatoes.
Now spoon the can of tomato soup over the top
Cover and Bake at 350 degrees for 2 hours.
Serves 4.
